A lot of restaurant software is designed in a meeting room. Ours got shaped on nights when both ovens were full and the phone wouldn't stop.

Pizza is unforgiving. Sizes, crusts, halves, well-done notes, delivery promises people remember. If the software muddles any of that, the kitchen pays for it. Working with Barrie operators (Cocelli Pizza included) forced us to keep tickets honest under real load, not demo conditions.

Cocelli also needed things other companies wouldn't build for them. We did that custom work. They still run ApexSlice across their locations and will tell you how it went. That's the part bigger platforms usually skip: if your shop needs something weird, we can often just build it.

Same idea for support. When something breaks, you shouldn't get a scripted help desk. You get people who can read the code and change it.
